
The most delicious and nutricious granola to start the day! Made with our award-winning hemp hearts.
Dry Ingredients:
- 3 cups rolled oats
- 1 cup raw cashew nuts, roughly chopped
- ½ cup hemp hearts
- ½ cup raw pumpkin seeds
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp salt
Wet ingredients:
- ½ cup maple syrup
- ¼ cup coconut oil, melted
- ¼ cup smooth peanut butter
- 1 tsp vanilla extract (optional)
The method:
Preheat the oven to 150°C and line a large baking tray with baking paper.
In a large mixing bowl, add in all the dry ingredients and set aside.
In another mixing bowl, mix together maple syrup, coconut oil, peanut butter and vanilla extract until well combined.
Pour the wet mixture into the dry ingredients and stir until well combined.
Transfer the granola mixture to the baking tray in a thin layer and bake on the centre rack of the oven for 20-25 minutes or until lightly golden, stir halfway. Use a spatula to gently press the stirred granola down for extra-clumpy granola.
Remove granola from the oven and let it cool down completely. This will further crispy up the granola.
Break granola into pieces and store the granola in an airtight jar or container at room temperature for 1-2 weeks.
Serve up with yogurt and fruit or top up on your porridge and smoothies or eat it like a healthy snack.
