Ingredients
Salmon fillet
- 1 tbsp honey
- 1 tsp Hemp Connect hemp oil
- Pinch salt & pepper
- 2 tbsp soy sauce
- Juice and zest of half a lemon
- 1 tbsp Thai sweet chilli sauce
Mash Potato Base
- Potatoes
- Butter
- Cream
- Salt & pepper
Stir fry
- Whatever vegetables you desire
- Extra Virgin Olive Oil
- Salt & Pepper
Instructions
1. Pre-heat oven to 150°C
2. Set potatoes to boil
3. Remove the salmon skin from the salmon, set aside
4. In a bowl, mix the honey, Hemp Connect hemp oil, Thai sweet chilli sauce, and soy sauce with the lemon juice and lemon zest
5. Add a pinch of salt & pepper to the bowl
6. Put salmon on baking paper and drizzle the above combined ingredients over the fillet (Leaving the skin aside)
7. Allow to sit
8. Place the salmon skin on a tray with baking paper, add lots of salt
9. On top of the salted salmon skin add another layer of baking paper and a tray (yes a tray) on top to flatten the salmon skin
10. Bake in the oven for 15 mins
11. In the meantime, heat a pan, preferably cast iron and add oil
12. Slice your vegetables to bite sizes
13. When potatoes are almost ready, place salmon filet in the oven for 5-6 mins
14. When the salmon goes in the oven stir-fry the vegetables
15. Mash potatoes, combining butter, cream, salt and pepper to taste/meat dietary requirements
16. Plate vegetables and salmon filet on a bed of mash potato
17. As a final touch sprinkle Hemp Connect hemp hearts
